The Bürgermeisterstück , also known as the Pastorenstück , was once a privilege reserved for important people like the mayor or pastor. This cut has a lot to offer: It is beautifully marbled , fine-grained , and particularly aromatic . It's also versatile—ideal for pan-frying, braising, or smoking.

To offer you the best quality, we only ship Mayor's cuts that have been dry-aged for at least three weeks. This aging process imparts a nutty flavor to the meat and makes it particularly tender. By rearing and slaughtering our own animals, we ensure species-appropriate animal husbandry and thus outstanding meat quality .

The mayor's cut , also known as the lady's slipper , comes from the leg, above the nut. In the US, it's called a tri-tip steak because of its distinctive triangular shape.

Raising our cattle

When you buy a Bürgermeisterstück from us, you will always receive meat from our own livestock or from partner farms in our area in the Black Forest.

Our animals are raised exclusively on our own farm feed. Our motto is: If the animals are well, so are the people. This philosophy is reflected in the quality of our products.

Our transport routes are a maximum of 60 km long, which benefits both the welfare of the animals and the environment. Humane and stress-free slaughter at our facility ensures the quality of our steaks.

Dry-aged beef – quite normal for us

Aging meat on the bone is a tradition we uphold. Our beef steaks are exclusively dry-aged, losing up to 50% of their liquid, which intensifies the flavor without drying out the meat.

Preparing Bürgermeisterstück on the grill – In 5 steps

It is important that the grill has a lid – whether it is powered by coal, gas or electricity.

Preparation:
  1. Prepare an indirect grill zone to approximately 130°C.
  2. Salt the steak and place it in the indirect zone until it almost reaches the desired core temperature.
  3. Bring the grill to high direct heat and sear the steak.
  4. Remove steak from the grill and let it rest briefly.
  5. Carve across the grain and serve.

To cook a steak to perfection, a digital probe thermometer is ideal.

    How are the products packaged?

    Almost all products are individually vacuum-packed . Only a few smoked products are simply wrapped.

    Do I have to be at home when my package is delivered?

    Our shipping service provider, GO! Express, has a delivery authorization to leave packages if no one is at home . While our packaging keeps items cold for up to 48 hours , you should always ensure someone is available to receive the package . It may also be advisable to have your package delivered to your workplace . You can safely keep the package sealed in a cool place until the end of the day. If, despite all these measures, you are not at home, GO! Express will attempt to contact you.

    Can I refreeze products that were shipped frozen, even if they are delivered thawed?

    Since our sustainable packaging ensures that the cold chain is never interrupted , you can refreeze the products without any worries .
