The mayor's cut , also known as the lady's slipper , comes from the leg, above the nut. In the US, it's called a tri-tip steak because of its distinctive triangular shape.

Dry-aged beef – quite normal for us
Aging meat on the bone is a tradition we uphold. Our beef steaks are exclusively dry-aged, losing up to 50% of their liquid, which intensifies the flavor without drying out the meat.

It is important that the grill has a lid – whether it is powered by coal, gas or electricity.

- Salt the steak and place it in the indirect zone until it almost reaches the desired core temperature.
- Bring the grill to high direct heat and sear the steak.
