Black Forest Ham PGI: Made from the leg, lightly salted, and smoked over fir and juniper branches, giving it its delicate smoky flavor.
Landjäger: Rectangular, pressed, semi-dry sausages made from equal parts beef and pork, seasoned with caraway, pepper, coriander, and garlic; popular as a long-lasting snack without refrigeration.
Little Wild Ones: Aromatic mini salamis made from wild boar, venison, and herb pork – intensely seasoned and air-dried.
Little Fire Devil: Spicy mini salamis from herb pork with a subtle chili heat.
Smoke whips: Long, thin snack sausages made from lean pork, mildly seasoned and gently cold smoked over fir branches.
Smoked Farmer's Sausages: Rustic farmer's sausages made from freshly slaughtered pork, coarsely grained, seasoned with pepper, marjoram and garlic, and lightly smoked.
Walnut Salami: Fine salami made from lean beef and pork with walnut pieces; matures for several weeks and develops a nutty, aromatic bouquet.
Kandelsalami: Air-dried salami made from lean pork, mildly seasoned and matured for several weeks – an aromatic snack.
