Black Forest Ham PGI
Black Forest ham is known far beyond Germany's borders—and rightly so, in our opinion. The ham captivates with its unique, characteristic flavor—smoky, slightly salty, and full-bodied, a true delight.
Black Forest ham is made from the leg, exclusively from our own herb-cured pigs. The ham pieces are hand-salted with mountain salt and rubbed with our own blend of spices. After an extended curing period and a drying process, a special smoking process follows.
In our smokehouse, the ham is gently aged for around two weeks at around 25 degrees in cold smoke over spruce and fir wood and fir branches.
The Black Forest ham is then aged for at least 3 months to develop its strong aroma and typical color and consistency.
Kandel salami
Air-dried salami made from lean pork, mildly seasoned and aged for two months for an intense flavor.
Little Wild Ones, Mini Salamis
Aromatic mini salamis made from wild boar, venison, and herb-cured pork – "the wild pleasure times 10." An intense flavor for those seeking something special.
Hearty Landjäger
Landjäger is a rustic snack sausage with a pepper and garlic flavor, lightly smoked over fir branches. Landjäger is made from beef and pork from our own rearing and slaughtering.
Homemade smoke whips
Rauchpeitschen is a mild snack sausage made from lean pork, without garlic, lightly cold-smoked over fir branches: "the long pleasure." All Rauchpeitschen are made from pork from our own rearing and slaughter.
The Moosmann Winery, Buchholz
Our vineyards are located in the best locations in the Breisgau region.
On the steep slopes of the Black Forest foothills in Buchholz and Sexau, our vines are rooted deep in the bedrock. Rocky, weathered gneiss soils produce mineral, densely structured wines.
In Mundingen and Herbolzheim, our vines grow on soft loess. The four- to five-meter-thick loess layer covers the underlying shell limestone soil, lending the wines a velvety texture and length.

2022 Pinot Blanc Kabinett dry
The wine's nose is filled with typical, delicate Burgundy aromas such as yellow fruit and delicate nutty notes. It appears soft yet aromatically powerful.
2022 Rivaner dry
Uncomplicated, fruity, and fresh, the Rivaner reveals its true essence. Its fragrance captivates with rich peach aromas, complemented by delicate floral notes and youthful citrus fruit.
2019 Pinot Noir red wine
This red wine from Baden has a delicately fruity aroma with dark berry flavors, accompanied by notes of sweet cherries.
