Black Forest Ham PGI: Made from the leg, lightly salted, and smoked over fir and juniper branches, giving it its delicate smoky aroma.
Black sausage in a ring: Heartily seasoned black pudding made from pork blood, bacon, pork rind, and meat with marjoram and pepper; juicy and spicy in flavor.
Kandelsalami: Air-dried salami made from lean pork, mildly seasoned and matured for several weeks – an aromatic snack.
Wild boar salami: Strongly spicy salami made from wild boar meat, delicately blended with herbs and fennel and traditionally matured.
Homemade pork rind: coarse pressed pork head and beef with rind and slightly sour aspic.
Farmer's Bratwurst (canned): Cold-smoked raw pork sausage with pepper, caraway, and curing salt – hearty and savory.
Black Forest Broadside: Streaky bacon from belly and back parts, dry-cured and cold-smoked for several months – mild and flavorful.
Homemade beer sausage (can): Coarse boiled sausage made from beef and pork with pepper, nutmeg, coriander, mustard seeds and garlic – hearty and substantial.
