Black Forest Ham PGI (in one piece): Taken from the leg, lightly salted, and smoked over fir and juniper branches; the piece develops an incomparably delicate smoky aroma when cut.
Kandel ham (in one piece): Selected pork legs are dry-cured with rock salt and herbs, matured for several months, and gently smoked – juicy, mild, and delicately flavored.
Black Forest Broadside: Streaky belly and back bacon, dry-cured and cold-smoked over fir branches – mild, spicy, and tender.
Walnut salami: Fine salami made from lean beef and pork with walnut pieces; it matures for several weeks, giving it a nutty, aromatic bouquet.
Kandelsalami: Air-dried salami made from lean pork, mildly seasoned and matured for several weeks – an aromatic snack.
Landjäger: Rectangular, pressed, semi-dry sausages made from beef and pork with selected spices; ideal as a long-lasting snack.
Little Wild Ones: Aromatic mini salamis made from wild boar, venison, and herb pork – intensely seasoned and air-dried.
Little fire devil: Spicy mini salamis from herb pork with a subtle chili heat.
Smoke whips: Long, thin snack sausages made from lean pork, mildly seasoned and gently cold smoked over fir branches.
Wild boar salami: Strongly spicy salami made from wild boar meat, delicately rounded off with herbs and fennel.
Lyoner (canned): Fine boiled sausage made from pork and beef, mildly seasoned and cooked in a can; ideal for sausage salads or on bread.
Homemade liver sausage (can): Coarse, spreadable liver sausage made from pork and liver, seasoned with onions, marjoram and pepper – spicy and creamy.
Smoked Farmer's Sausages: Rustic farmer's sausages made from freshly slaughtered pork, coarsely grained, seasoned with pepper, marjoram and garlic, and lightly smoked.
